My favorite childhood Kacang Puteh (traditional Indian store selling various nuts in the 1960s) was chickpeas. For some reason, I didn’t like sweetened nuts or peanuts.
Today chickpea is still my favorite.
Chickpea is a confirmed prebiotic i.e. it helps your gut to produce good bacteria.
Here is my simple gluten free lunch – Chickpea served with fennel bulb (another prebiotic) and mushrooms. Who says your lunch must have noodles or rice?
Hildegard von Bingen mentioned in her medicinal text that chickpeas do not increase toxins in your body and it is light and easy to eat.
